Labor Day Kabobs!

Labor Day is only a few days away! If you’re planning a cookout to celebrate, here’s a quick Kabob recipe to try!!!

Sweet and Tangy Pork and Pineapple Kabobs

Enjoy this delicious kabob recipe this Labor Day weekend!

  • MARINADE
  • 1/2 cup olive or canola oil
  • 1/4 cup orange juice
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

PORK

  • 1 pork tenderloin, about 1 1/4 to 1 1/2 pounds, cut into even 1 1/2-inch chunks
  • 2 cups 1 1/2-inch pineapple
  • 1 sweet red or yellow pepper, cut into 1 1/2-inch chunks
  • Wooden skewers (soaked in hot water)

Combine all marinade ingredients in a bowl.  Mix thoroughly. Reserve 1/4 cup of the marinade to itself.  Place the pork chunks in a plastic bag or bowl and pour the remaining marinade over the pork. Cover and refrigerate for at least 4 hours.

Preheat the grill to medium-high.

Place the pork cubes on the skewers, alternating with the pineapple and pepper pieces. Grill, turning frequently, about 10 to 12 minutes or until cooked through. Baste with the reserved marinade during the last few minutes of grilling.

Carolina Ale House ROCKS!!!

Visit Carolina Ale House in Augusta GA!

If you haven’t been yet, then you’re destined to go to the Carolina Ale House this weekend!  They have tons of food to choose from on their menu, along with music, televisions at the bar and wonderful hosts!

Notice the name “Carolina:” it is a North Carolina chain that has made it’s way across borders.  It first dipped into South Carolina (Columbia) and has jumped the border again to make a home in Augusta!

Be sure and try it out!

Apples and Yogurt... Yummy!

In order to become a healthy snacker, we must stay away from the snack machine… chips, candy and other sweets will keep you away from your title as the “healthy snacker.”  Instead, here’s a couple of ideas I found on Realsimple.com:

  1. Fix your own food. If you fix your own snacks at home, be sure to include fruits, cheese, yogurt and veggies ( I normally bring pears and baby carrots.).  This way, your calorie intake will probably  be between 100 t0 300 calories, which is excellent!
  2. Eat a balanced snack.  A pear by itself won’t cut it. Add a you a piece of cheese or something; that way, it’ll take longer to break down and will keep you full until your next meal.
  3. Maintain weight with snacking.  I bet you haven’t heard this before: “Snacks keep you from getting fat.” As unbelievable as it sounds, snacks can keep you from overeating during meals (because you won’t be extremely hungry). 

You can find some delicious and nutritious snacks at your St. Andrews’ local Wal- Mart.

Mother’s Day Recipe

Give mom Chicken Cutlets!

If you plan to make dinner for your mommy this Mother’s Day, here’s a recipe that I found on The Augusta Chronicle’s web site that I would like to share with you:

Crispy Chicken Cutlets with Mustard Vinaigrette:

For the chicken:

  • 3 boneless, skinless chicken breast halves or 6 chicken cutlets
  • Salt and freshly ground black pepper
  • 3 tablespoons Dijon mustard
  • 3 tablespoons olive oil
  • 1 cup panko or regular bread crumbs
  • 1 cup Parmesan cheese
  • 1/2 cup flour

Set oven to 400 degrees. Optional: Line the baking sheet with parchment paper and set aside.

If using breast halves, cut each in half horizontally to make two thin cutlets. Sprinkle both sides of each cutlet with salt and pepper.

Combine the mustard and olive oil in a shallow bowl or pie plate. Combine the panko, Parmesan and flour in another shallow bowl. Season the panko mixture with black pepper. Dip each chicken cutlet in the mustard mixture and then dredge in the panko mixture. Set onto the baking sheet and continue with remaining chicken. Bake 15-20 minutes.

For the vinaigrette

  • 1 tablespoon Dijon mustard
  • 1/4 cup white balsamic vinegar
  • 1/2 cup olive oil
  • Salt and freshly ground black pepper, to taste

Whisk the mustard and vinegar together in a small bowl. Slowly whisk in the olive oil. Season to taste with salt and pepper; set aside until ready to serve.

When the chicken is done, drizzle each serving with some of the vinaigrette. 

Makes 6 servings.

Doughnuts CAN Be Good For An Office Snack

doughnut holesI can feel the pounds creeping up on me at work… and why is that? It’s because we’re always having doughnuts during meetings! And although they’re so delicious, I have to slow down on them. So then I started thinking of some other alternative snacks that we could possibly have during meetings, and guess what? Doughnuts are included! Here’s a few items that are considered best choice snacks while at work:

Banana Bread: 190 calories. It will take 53 minutes to walk it off.
Half-bagel: 120 calories. It will take 33 minutes to walk off.
Doughnut holes: 100 calories and will take 28 minutes to walk off.
Grapes: 58 calories and will take 16 minutes to walk off.

This was refreshing compared to some of the worst choices:

Cinnamon roll: 760 calories along with 211 minutes to walk it off.
Frosted cupcake: 360 calories and 100 minutes to walk it off.
Croissant: 272 calories and 75 minutes to walk it off.
Crème doughnut: 307 calories and 85 minutes to walk off.

So when the next meeting adjourns, recommend doughnut holes instead of a whole doughnut for snacks.

Make Cookies For Your Family

Try making some cookies before Christmas. Your kids can change it up and leave Santa some strawberry cookies this year.

Here is how to make it!
Creamables
1 stick butter
1 cup dark brown sugar

Wet Ingredients
1/2 cup sliced fresh strawberries
3 tablespoons milk
1 tablespoon lemon juice
1 tablespoon white sugar
1 1/2 teaspoons vanilla
1 teaspoon lemon zest

Dry Ingredients
2 cups oatmeal
1 cup finely ground Nilla Wafer cookies
3/4 cup flour
3/4 cup dehydrated strawberries
1/2 cup sliced fresh strawberries
1/2 cup white chocolate chips or dark chocolate chips
1/2 teaspoon baking soda
1/4 teaspoon salt
